Saturday Morning Tacos: Chorizo, Potatoes, and a Little Backyard Char
A weekend breakfast built the same way I build a good fire: patient, in the right order, and worth waking up for.
I grew up believing breakfast should smell like something's happening before you even walk into the kitchen. Down here in Tampa, that usually means smoke off the grill, but on a lazy Saturday it's just as often chorizo hitting a hot skillet. This taco is one of those mornings turned into a recipe: crumbled chorizo, potatoes cooked right in that rendered fat, and a charred corn salsa that wakes the whole plate up. My kids fight over the last tortilla every time.
Don't drain the fat
When the chorizo's done, pull the meat but leave every drop of that orange fat behind in the pan. That's where your potatoes go next. It's the same logic as cooking eggs in bacon grease. The potatoes pick up all that spice and smoke the chorizo left behind, and you get a real crust on the outside instead of a pale, boiled-tasting cube.
