Greek Lemon Chicken and Potatoes: One Pan, No Excuses
A weeknight roast that leans on lemon, garlic, and good oil instead of a long ingredient list.
I didn't grow up cooking Greek food, but I grew up cooking simple, and this dish is simple in the best way. Lemon, garlic, oregano, good oil, chicken and potatoes in one dish. That's the whole list. It reminds me of the way my grandmother Hellon cooked, not by fussing over a recipe card but by trusting a handful of ingredients to do their job if you treat them right. This one's easy enough for a Tuesday and good enough that nobody at my table is gonna ask what's for dessert instead.
Salt it early or salt it late
Chicken breast is lean, and lean meat has no room for mistakes. If you salt it and then let it sit on the counter for ten or twenty minutes before it hits the heat, you'll pull moisture right out of the surface and lose the browning you want. Salt it an hour or two ahead so the salt has time to work its way in and hold onto that moisture, or salt it right as the dish goes together and into the oven. Don't get caught in that middle stretch. It's a small thing but it's the difference between juicy chicken and chicken that eats like cardboard.
