Overnight Blueberry French Toast, Built for a Full Table
A make-ahead challah casserole with cream cheese and warm blueberry sauce. Do the work tonight, then let the oven carry the morning.

The fridge does the slow part. You just have to be patient enough to let it.
I'm a smoke-and-coals man, but a crowd of hungry neighbors on a holiday morning calls for something else. This one is slow cooking in its own way. You assemble it the night before, the fridge does the waiting, and in the morning you pour coffee while the oven works. Nobody's flipping anything.
Why I make it for company
My mother Barbara taught me a Southern table is about who shows up. When people show up, I want to sit with them, not stand at a stove. A pan of this on the counter, a pot of blueberry sauce still warm, and the house smells like vanilla and butter. That's a gathering.

30 minutes, and you’re ready to cook.
Ten small steps, all of them done before you ever pour a drop of custard. Line things up in this order and the assembly goes slow and easy.
- Gather EquipmentGather a 9x13-inch baking dish, nonstick spray, a large cutting board, a sharp knife, a large mixing bowl, a whisk, a medium saucepan, measuring cups and spoons, and prep containers.
- Prepare the Challah BreadCut 12 slice Challah Bread into 1-inch pieces. Divide the bread pieces into two equal portions and place in separate prep containers.3 min
- Prepare the Cream CheeseCut 1 Two 8-Ounce Packages Cream Cheese ((Or Mascarpone Cheese)) into cubes (or scoop with a small cookie scoop) and place in a prep container.2 min
- Measure the Blueberries for AssemblyMeasure 1 cup Blueberries into a prep container.1 min
- Prepare the EggsCrack 12 Eggs into a large mixing bowl.2 min
- Measure Milk, Vanilla Extract, and Maple SyrupMeasure 2 cup Milk, 1 tsp Vanilla Extract, and ⅓ cup Maple Syrup into separate prep containers.2 min
- Measure Sugar and CornstarchMeasure 1 cup Granulated White Sugar and 2 tbsp Cornstarch into a prep container.1 min
- Measure Water and Fresh Blueberries for SauceMeasure 1 cup Water and 1 cup Fresh Blueberries into separate prep containers.1 min
- Measure ButterMeasure 1 tbsp Butter into a prep container.30s
- Spray and Stage the Baking DishSpray the 9x13-inch baking dish with nonstick spray and set aside. Arrange all prepped ingredients near the work area in the order they will be used: bread portions, cream cheese cubes, blueberries for assembly, eggs in the large bowl, milk, vanilla extract, maple syrup, sugar and cornstarch mixture, water, fresh blueberries for sauce, and butter.

Changing it up
Raspberries or blackberries trade in easily for the blueberries. Brioche works if you can't find challah. For a tangier middle, goat cheese or brie can stand in for the cream cheese. I'd stay with the maple, though.

Does it contain common allergens?
Go on, then
Start tonight. Cube the bread, pour the custard, set the book on top and go to bed. Tomorrow, call everybody to the table and let them smell it first. Fire up something good.
