Chicken Parm for the Sunday Table, Crisp Crust and All

A skillet, an oven, and a little patience give you a golden cutlet under bubbling mozzarella, with a garlic marinara made in the same pan.

Food is love made visible. Sometimes it comes breaded and golden.

Why I'm leaving the grill for this one

Most weekends you'll find me out back with the coals going. Every now and then my family asks for something from the stove, and this is what I make. Crispy chicken, garlic marinara, mozzarella melted right to the edge. It feeds four, and it takes about 45 minutes start to finish.

A table with everybody at it

My mother Barbara taught me that a family dinner is less about the food and more about who shows up. Chicken parm is that kind of dish. Nobody has to be fancy, the kids can help with the breading line, and the whole house smells like garlic by the time the oven is hot. It's American Italian, and it fits a Southern table fine.

Three moves make or break this recipe.

Before you light the stove, here are the three moves I watch. The frying time is short, so they matter.

Frying: 6 minutes total. Baking: 8–10 minutes at 400°F until cheese browns and chicken reaches 165°F internal.

  1. Pound chicken to even thickness, season early or just before pan.
  2. Bread cutlet and rest 10 minutes so coating sets.
  3. Fry in olive oil medium-high until deep golden, 3 minutes per side—don't fidget.
Mise en place

30 minutes, and you’re ready to cook.

Fourteen small steps, and I do them in this order so the breading line is ready before the oil gets hot. Get the kids set up at the counter.

What you’ll need

Tools for this recipe.

Nothing fancy here. A meat mallet and a big skillet do most of the work, and the thermometer tells you when the chicken is done.

  • shallow bowl
  • large skillet
  • baking dish

Pound, bread, rest, fry

Pound the chicken to about 1/4 inch between plastic wrap so it cooks through before the crust goes too dark. Flour, egg, then breadcrumbs mixed with parmesan, pressing gently. Let the breaded cutlets sit about 10 minutes so the coating sets. Fry in shimmering olive oil over medium-high, 3 to 4 minutes a side, and don't fidget with it. Then use the same skillet for the garlic, tomatoes, vinegar, and sugar. Bake under mozzarella at 400°F for 8 to 10 minutes.

Salt is the one rule I'd have you remember. When you add it changes whether the chicken stays juicy and the crust stays crisp.

Food science

Salt and protein retention

Salt early (40+ minutes ahead) or right before the pan to lock moisture into the chicken. Avoid the 5–30 minute window when surface is wet from drawn-out moisture.

Workaround

Dry-brine 40+ minutes ahead, or season immediately before frying.

Olive oil does a lot of quiet work in this pan. These are the things it gets along with best.

Why it works

A few pairs in this dish share flavors with each other. That's why the plate tastes put together and not piled up.

  • tomato + fresh basilBoth carry clove-like and smoky notes.
  • olive oil + tomatoBoth carry clove-like, smoky, fresh and grassy notes.
  • egg + breadcrumbsBoth carry earthy and roasted notes.

What goes next to it

This plate is rich, so keep the side plain. A simple green salad with a sharp dressing does the job. The vinegar and tomato in the sauce already lift the cheese, and basil on top keeps it from tasting heavy. Black pepper is the only heat here, mild and easy for kids.

A small word at the stove

Don't crowd the skillet, and let the oil shimmer before the chicken goes in. Once it's down, leave it alone for the full 3 minutes. Let the baked dish rest 2 minutes before serving so the cheese settles and nobody burns a tongue.

Common questions

How long does chicken parm take to make?
About 45 minutes in all, with 20 minutes of prep and 25 of cooking. It serves four.
When should I salt the chicken?
Salt it right before it hits the pan, or dry-brine it 40 minutes or more ahead. Salting 5 to 30 minutes ahead draws out moisture and can make the crust soggy.
Why let the breaded cutlets rest?
Ten minutes lets the egg set so the coating sticks. The crust is less likely to slide off in the pan.
How do I know the chicken is done?
It should reach 165°F inside. Fry about 3 to 4 minutes a side, then bake 8 to 10 minutes at 400°F.
Is this dish spicy?
No. The only heat is black pepper, and it's mild.
What allergens does it contain?
It contains milk, egg, wheat, gluten, and sulfites. It fits a nut-free diet.

Set up your three bowls, get the kids at the counter, and let the oven do the last part. Put it in the middle of the table and wait for the quiet that comes right after the first bite. Fire up something good.
